Effects of bovine and caprine Monterey Jack cheeses fortified with milk calcium on bone mineralization in rats

چکیده
Bovine and caprine Monterey Jack cheeses were produced unfortified (cheese) or fortified with milk calcium (Ca-cheese). Five groups of male rats were fed a control diet or one of four experimental diets: bovine cheese diet, bovine Ca-cheese diet, caprine cheese diet, and caprine Ca-cheese diet to test their effects on calcium absorption as well as bone mineralization. Significant differences (Po0:05) were found for calcium absorption and digestibility with the data yielding the pattern: caprine Ca-cheese4caprine cheese 1⁄4 bovine Ca-cheese4bovine cheese4control. Significant increases (Po0:05) occurred in bone mineral content (BMC), bone mineral density (BMD) and breaking force in the femoral bone with the pattern: caprine Ca-cheese4caprine cheese4bovine Ca-cheese4bovine cheese4control. Our findings suggest that caprine cheese unfortified or fortified with milk calcium had the most positive effects on calcium absorption and bone mineralization in rats, with bovine cheeses still having significantly greater effects than the non-casein control. r 2006 Elsevier Ltd. Influence of bovine and caprine casein phosphopeptides differing in alphas1-casein content in determining the absorption of calcium from bovine and caprine calcium-fortified milks in rats.
Bovine and caprine milks have a similar overall gross composition, but vary considerably in the ratios of their casein components. These differences cause significant changes in the ability of caseins to bind and stabilize calcium (Ca). It might be expected that these in vitro variations, which are thought to be due to differences in casein phosphopeptides (CPP) content, could lead to in vivo d...
متن کاملEvolution of free fatty acid profile during ripening in cheeses manufactured from bovine, ovine and caprine milks with extracts of Cynara cardunculus as coagulant
mChanges in the concentrations of free fatty acids (FFA) in bovine, ovine and caprine milk cheeses manufactured with a plant rennet (flowers of Cynara cardunculus) were studied throughout a 68-day ripening period. The long-chain saturated (C16 :0 and C18 :0) and unsaturated (C18 :1, C18:2, and C18 :3) FFA were the most abundant at all stages of ripening. The overall concentration of FFA in fres...
متن کاملThe effect of casein phosphopeptides on calcium absorption from calcium-fortified milk in growing rats.
The effect of casein phosphopeptides (CPP) prepared from bovine casein by enzymatic hydrolysis (extrinsic CPP) on Ca absorption from Ca-fortified milk was studied in young male rats, in comparison with that produced from casein in the small intestine (intrinsic CPP). The gastrointestinal Ca disappearance (Ca ingested - (gastric Ca + intestinal Ca )) was calculated as an indirect measurement of ...

Concentrations of 12 major and trace minerals and cholesterol in commercial goat fluid milk, evaporated, powdered, yogurt, and cheese products manufactured in the US were evaluated for compositional differences. Minerals were determined by an Inductively Coupled Argon Plasma Emission Spectroscopy (ICAP), while cholesterol was analyzed using colorimetric and gas chromatographic (GC) methods. Mea...
